Accueillie sur le fournil de Marie Couchoud (boulang\u00e8re Nature&amp;Progr\u00e8s) avec Nathan Soula (boulanger au levain naturel) et Pierre Rivi\u00e8re (animateur\/chercheur sp\u00e9cialis\u00e9 dans les bl\u00e9s paysans), la formation allie th\u00e9orie et pratique, pour comprendre les sp\u00e9cificit\u00e9s des qualit\u00e9s boulang\u00e8res des bl\u00e9s paysans et pratiquer \u00ab la main dans la p\u00e2te \u00bb pour les appr\u00e9hender de mani\u00e8re sensible.
