L\u2019adjonction de 20&nbsp;% de farine des esp\u00e8ces de mils paysans test\u00e9es dans un pain au froment semble peu influer sur le d\u00e9veloppement\/tenue des pains \u00e0 des taux d\u2019hydratation de 65&nbsp;%. On peut donc tenter d\u2019augmenter ces proportions. Dans le d\u00e9tail, l\u2019empois a un r\u00f4le positif sur l\u2019absorption de l\u2019eau et la tenue des p\u00e2tes. Son r\u00f4le est moins \u00e9vident sur le d\u00e9veloppement des pains o\u00f9 son impact reste \u00e0 confirmer. Les effets d\u2019une augmentation de la proportion d\u2019empois dans une p\u00e2te pr\u00e9sentant plus de farine de \u00ab\u00a0mil\u00a0\u00bb seront \u00e0 analyser dans le futur. Dans une modalit\u00e9 empois, l\u2019augmentation du taux d\u2019hydratation semble aussi possible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Parmi les vari\u00e9t\u00e9s paysannes de la collection, le s\u00e9taire de Chine est le meilleur du panel en termes gustatifs. L\u2019adjonction d\u2019une bouillie de son n\u2019inf\u00e8re pas n\u00e9gativement sur ces qualit\u00e9s ce qui semble confirmer que le d\u00e9corticage n\u2019est pas n\u00e9cessaire. Le millet japonais semble conf\u00e9rer aux pains un go\u00fbt amer et d\u00e9gage un ar\u00f4me plut\u00f4t \u00ab&nbsp;vert&nbsp;\u00bb (l\u00e9gumineuses). Le d\u00e9corticage pr\u00e9alable semble n\u00e9cessaire \u00e0 tester pour aller plus loin avec cette esp\u00e8ce.
