On parle alors de \u00ab faible force boulang\u00e8re \u00bb, mat\u00e9rialis\u00e9e par un indicateur technologique le \u00ab W \u00bb (pour \u00ab Working \u00bb). Pour exemple, les bl\u00e9s paysans exc\u00e8dent rarement un W de 100 alors que les bl\u00e9s meuniers modernes vont au-del\u00e0 de 300. Cette caract\u00e9ristique peut varier selon l\u2019ann\u00e9e, les p\u00e9riodes de l\u2019ann\u00e9e et les vari\u00e9t\u00e9s.
